Sweet Potato Mashed

Yields: Approx 4 servings

4 pounds sweet potatoes (about 10 sweet potatoes) peeled cut into 1 inch cubes

1 ½ cups butter cut into cubes

3 tbls brown sugar

½ tsp ground cinnamon

¼ tsp ground nutmeg

4 tbls pure maple syrup

½ cup heavy cream or more per desired thickness

Salt and pepper to taste

Directions:

Boil potatoes till fork tender, mash potatoes by hand using a masher or fork.  Then, whisk butter, brown sugar, cinnamon, nutmeg, maple syrup and cream for desired thickness.  Season with salt and pepper to taste.

Left over Sweet Potato Mashed Pancakes for breakfast:

Yields approx. 4 servings

1 ¼ cups leftover mashed sweet potatoes

½ crème fraiche

¾ cup milk 1 large egg

1 ½ tablespoon maple syrup (plus more for serving)

4 tbls butter

1 cup AP Flour

¾ tsp baking powder

¼ tsp baking soda

¼ tsp kosher salt

Pinch of ground nutmeg

Pinch of ground cinnamon

Directions:

Combine sweet potatoes, crème fraiche, milk eggs and maple syrup in a bowl.  Melt 2 tbls butter and add to mixture and blend until all ingredients are incorporated.

Combine flour, baking powder, baking soda, salt, nutmeg, and cinnamon in large bowl and mix to combine.  Add potato mixture to the dry seasoning mixture. Stir till combined, DO NOT OVER MIX.

Melt remaining 1 tablespoon of butter in large skillet over med. Heat and coat pan.  Add about 1/3-1/4 cup of batter using a ladle or spoon.  You may need to flatten batter a little with the back side of the ladle or spoon.  Cook until the one side is golden brown approx. 2-3 minutes.  Carefully flip and cook until the other side is golden brown.  Serve immediately with warmed maple syrup.

Left over Chilled Turkey and Sriracha Sandwich

Yield 4 sandwiches

3 cups rough chopped cooked turkey—white and/or dark meat

1/3 cup Mayonnaise

2 tbls +  more if desired Sriracha

6 Sliced Cucumbers

1/3 cup grated Carrots

1 bunch Chopped cilantro

Juice of 1 lime

Salt And Pepper

Fresh Baguette cut into 4 portions

Directions:

Chopped chilled leftover turkey. Mix mayonnaise, sriracha, juice from one lime salt and pepper to taste. Spread mayo mixture on inside of baguette. Layer turkey, cucumber, carrot, and chopped cilantro.
